How are you doing? I hope you’re hanging in there during these times of self-isolation! I’ve been cooking and baking a lot more, so I figured it was time to share another recipe. In general, I eat gluten-free, sugar-free and dairy-free (although I cheat and use grass-fed butter on these) so because it can be hard to find recipes to fit all that criteria, I created my own little twist based on some recipes I’ve found in the past. Here it is:

Ingredients:

-4 eggs

-4 tbsp coconut flour

-1/4 cup coconut milk or almond milk

-1 tsp. vanilla

-1/4 cup Lily’s Chocolate Chips (or to taste)

-maple syrup

-oil to grease pan (I use an avocado oil spray)

-butter (optional)

Instructions:

-Heat large pan

-Mix all the ingredients except chocolate chips and let sit for 5 minutes

-add chocolate chips

-grease pan with oil

-spoon pancakes into pan. Cook approximately 2-3 minutes on each side.

-top with butter (if dairy is okay with you) and maple syrup for extra sweetness!
